The Art of Brewing Black Tea; Secrets to a Perfect Steep

Brewing a perfect cup of tea goes beyond pouring boiling water over dry leaves. It is a sensory ritual that rewards patience. The first and most critical component is water quality. Always start with fresh, cold, filtered water. Water that has been re-boiled loses dissolved oxygen, resulting in a flat taste and a dull, cloudy appearance.

Turn off the kettle as soon as the water reaches a rolling boil; over-boiled water ruins the flavor. Porcelain or ceramic teapots are ideal because they retain heat evenly. Rinse the pot with warm water beforehand to heat its body. Add one teaspoon of loose tea per cup, pour in the hot water, and let it steep gently over the steam of a samovar or kettle for 10 to 15 minutes. Covering the teapot with a warm cloth helps trap the volatile aromas inside.

Fine, aromatic tea needs gentle steam rather than harsh direct heat. Boiling the tea leaves burns the delicate notes, while steaming coaxes them out.
