The Balance of Green Tea; Eliminating Bitterness
Many avoid green tea due to a past experience with a bitter brew. Green tea leaves are exceptionally delicate and, unlike black tea, are not oxidized during processing. Consequently, they require gentler handling.
The most common mistake is using boiling water at 100°C. Scorching hot water burns the green tea leaves, releasing bitter tannins too quickly. The ideal temperature is between 75°C and 80°C. To achieve this, let the boiled water rest for 2 to 3 minutes before pouring. Additionally, green tea steeps rapidly; 3 to 5 minutes is plenty to extract its sweet, vegetal flavor.
Never leave green tea to steep on a hot burner or steam. Once the short steeping window closes, separate the leaves immediately.
