In the international tea grading system, the term Orange Pekoe (OP) designates the highest grade of black tea composed of large, whole leaves. The word "Pekoe" is believed to derive from the Chinese word for fine downy hair (Baihao), referring to the delicate buds. "Orange" pays homage to the Dutch royal family (House of Orange-Nassau) who pioneered tea imports to Europe, and to the vibrant, coppery-orange infusion of the brewed liquor.
In the Iranian market, this category is widely appreciated as "Qalam" (wiry/stem-free whole leaf) tea. Because the leaves are preserved in their full, rolled state rather than broken, they retain their essential oils, yielding a smooth, elegant cup with a rich aroma and minimal bitterness.

Because whole-leaf OP teas are large and tightly rolled, they require time and gentle heat to release their full essence. Follow these traditional brewing steps for the perfect cup:
Use filtered water. Bring it to a rolling boil, then allow it to settle for a minute to reach roughly 95°C (203°F).
Add one full teaspoon of Miad OP tea leaves for each cup of tea into a porcelain or clay teapot.
Place the teapot over indirect steam (e.g. over a kettle or samovar). Steep patiently for 15 to 20 minutes.
Pour the tea into standard clear glasses to appreciate the clear, sparkling copper coloration of the infusion.
